VINIFICATION PROCESS
- TO CREATE A WHITE "TERRE DI VALBONA" VERDICCHIO DI MATELICA DOC GRAPES ARE VERIDIKKIO ARE SELECTED FROM THE BEST PLOTS OF BELISARIO ECONOMY. VINEYARDS WITH A SOUTHERN DISPOSITION ARE LOCATED IN THE UPPER PART OF THE VALLEY ESIN. IN THE VINIFICATION PROCESS, THE WORT IS FERMENTED IN A STAINLESS STEEL TANK FOR 20 DAYS AFTER WHICH THE 4 MONTHS ARE AGED IN STEEL TANKS, AND AFTER ANOTHER 30 DAYS OF BOTTLING AGED IN THE BOTTLE.
